Cucumbers originated in India over 3,000 years ago, were cultivated and prized by the Romans, and are now common in many cuisines around the world. Lots of varieties exist, but the common American "slicer" has a sweet mild taste, with a thick skin that increases its shelf life. Pickling cucumbers are typically smaller, but any cucumber can be pickled.
