Also known as Florence Fennel or Bulb Fennel, the succulent white stalks of this vegetable are delicious raw or cooked. Fennel leaves and seeds are also edible, although the bulb is the best part of this variety. Used mostly in Italian cooking, its strong anise flavor mellows when cooked.
