Originally from South Africa, this sweet cucumber relative was grown widely in China before the Americans discovered it in the 1600s. Over 1200 varieties exist. A little-known fact is that watermelon rind (the white part, not the green peel) contains many nutrients, and is used as a stir-fry vegetable in China. Here in the US the rind is pickled.
